Missing Muffins

Once upon a time I used to bake regularly. Especially muffins. Which go so well with tea or coffee. I should get my muffin tin down from the top shelf and make a batch. Maybe when the heat subsides.

Season of Rest

Somewhere along the line we stopped having people over. Mostly because we don't host Life Group anymore. We do family dinners, especially for birthdays. But not much else.

The last couple years have been a season of  dealing with the day-to-day stuff. Grieving the losses in our lives. And resting in-between.

Hopefully we can get back to being hospitable. Little by little.

Take it Down

It was fun while it lasted. We had to take down the hummingbird feeder because the yellow jackets took over. The yellow jackets chased the birds away and set up camp. Sorry, little birds!

Sticky Sesame Cauliflower Love

We have a new favorite dinner recipe: Sticky Sesame Cauliflower. Cut up cauliflower and bake on cookie sheets. Prepare the simple sauce on the stove. I added carrots for color. We don't even miss the meat.

Sticky Sesame Cauliflower Total Time: 25m

Ingredients 1 small head cauliflower, chopped (6 1/2 cups florets) 1/3 cup low-sodium soy sauce 1/4 cup pure maple syrup, honey, or agave 1/4 cup rice vinegar 1 tbsp minced garlic 1 ½ tsp toasted sesame oil ½ tsp powdered ginger 1 1/2 tbsp cornstarch or arrowroot 1/4 cup water sesame seeds and scallions, for garnish.
Preheat your oven to 450 F. Grease a baking pan or line with parchment. Cut cauliflower into florets, then slice so one side of each floret is flat. Arrange in a single layer in the greased pan. Bake 10 minutes on the center rack. Meanwhile, whisk together the soy sauce, sweetener, vinegar, garlic, sesame oil, and ginger in a saucepan. Bring to a boil. While waiting, stir together the cornstarch and water until cornstarch dissolves fully, then slowly whisk this into the saucepan as soon as it boils. Turn heat to medium and cook 2 minutes, stirring more frequently once it returns to a boil. Cook until thick. You can also make the sauce ahead of time if desired, and it thickens more as it sits in the fridge. Flip cauliflower florets and bake 10 additional minutes. If desired, you can now move the pan to the top rack and broil 1-2 minutes. Pour sauce over florets. Sprinkle sesame seeds and optional scallions on top, and serve.

Hot Summer Days

I have much to be thankful for. I am thankful we have air conditioning in our house and car. Although I am not going out of the house much during this heat wave.

I am glad I was only stung once by the bees around our recycling cans. And extra relieved that I am not allergic to bee stings!

20 Years Later

Twenty years ago this summer we moved into the home we built in the loop. Along with seven other families in the Self-Help Building program. Five of the families, including us, are still here. And we are still there for each other.

Sweet End to the Birthday Week

And the birthday celebration continued today. Our older daughter and her boyfriend came to visit. Our son's girlfriend surprised us by getting off work early and showing up before we expected her. My mom and my mother-in-law joined us for dinner. Full house! Great way to end my birthday week.

Birthday Tour 2018

I am celebrating my birthday in stages. Today was my birthday tour with my younger daughter. We had fun sharing free treats around Olympia. Starting with free coffee or food item at Starbucks--chose a breakfast sandwich and bought my drip coffee. We enjoyed a cinnamon roll from Panera Bread, smoothie from Jamba Juice, and a sub and drink from Jersey Mike's. What a fun mother-daughter day! Happy birthday to me!

Donated Jacket Love

My husband saved the day for me during our daughter's graduation. I didn't wear a jacket and the outdoor event got colder and colder. After our daughter received her diploma, but there were still hundreds more names to be read, my husband went to our car. He brought back a jacket from our trunk. It was in the donate bag for a local charity. Just what I needed.
