Dinner Outside

Our community group hasn't been meeting regularly this summer. But we can grab dinner with one of our friends. Try out a new food cart on Pickering Road. Sit outside and enjoy burgers and fries. We were a little late to try the milkshakes. Maybe next time.

Always

When we were newly married, I appreciated how they would always feed us. No matter what time we stopped by. Now they feed my husband lunch every work day. I can count on them for unconditional love, support, and prayers. I know they will always love each other. And be a great team. Day after day. Year after year.

Day in Seattle

We spent the day in Seattle with our older daughter.  Complete with coffee, tea, and fresh-out-of-the-oven cookies at Queen Anne Storyville, lunch at the Fremont Sunday Market, and dinner in the International District. And so ends our belated birthday celebration.

I keep giving my favorite books away. So I've been on a mission to find a replacement cookbook. This week a copy came in to my second-hand book store. And my friend who works there set it aside for me. Mission accomplished. (But I wouldn't mind finding a new edition someday.)

Baby Doll Birthday

I was the Energizer Bunny. Walking in circles in the hospital. Grandma L. was with the boys. Almost 4 and almost 2. And then there was a beautiful baby doll girl. With big brown eyes.

I have a new favorite summer drink. Cold brewed tea. Put some loose Lipton in my fancy bottle. Add water. Pop in the fridge. Pour through a strainer before drinking. I like it unsweetened but I might experiment with variations.

Around the Corner

I don't like changes in the season. I am barely used to one, when another starts. But the good thing about the approach of fall is that Bible Study Fellowship is around the corner. I can't wait to dig in to the Life of Moses. And study the Bible with other women. The Olympia women's class begins Wednesday, September 10 at 9:20 AM.

Z Boat

When we were first married, every dinner included rice. That's what happens when you grow up in Hong Kong and Taiwan. These days you find zucchini featured in every dinner and dessert.

Tonight we had Taco Zucchini Boats. I broke into my freezer stash of grass-fed beef. Yum.

Apple-Free

I can't believe it's not apple! Seriously. This mock apple pie recipe is delicious! And a great way to use up the garden bounty.

The earth brought forth vegetation, plants yielding seed according to their own kinds, and trees bearing fruit in which is their seed, each according to its kind. And God saw that it was good. Genesis 1:12 ESV

MOCK APPLE PIE (ZUCCHINI PIE) 
6 c. zucchini (NOTE: extra large zucchini are preferred, they're firmer)
1 1/4 c. sugar
1 1/2 tbsp. flour
1 1/2 tsp. cream of tartar
1 1/2 tsp. cinnamon
Dash of salt and nutmeg
Dough for double pie crust
Pare zucchini, wash and slice lengthwise. Remove seeds. Slice like apples. Add a little water and bring to a boil in a large saucepan. Simmer for about 15 minutes or until tender. Cool and drain well. Add rest of ingredients and place into an unbaked 9 inch pie crust. Cover with top pie crust and flute to seal edges. Cut slits into top of crust for steam to escape. Bake at 350 degrees for 45 to 60 minutes.

Zucchini Frittata

My friend posted a recipe for zucchini frittata. I tried it for lunch and it was yummy! Next time I might doctor it up with some peppers and mushrooms. Maybe even some kale.  But as is, works for me too!

Zucchini Frittata recipe:
1/2 cup chopped onion
1 cup grated zucchini
3 eggs, beaten
1/4 tsp. salt
1 tsp. oil
1 cup grated or shredded Swiss cheese (I used some cheddar and provolone.)

Saute onion and zucchini in a skillet over med. heat. 2-3 minutes.
Pour eggs over veggies. Cook until almost set, 6-7 min.
Sprinkle cheese over top and bake 350, 4-5 minute, until
done and cheese melted.

Friends Come Together

Sometimes there are connections you don't know about. Like how many of my friends knew the woman I was praying for. God chose to answer prayers for healing by taking her Home. I saw many old friends at the memorial service today.

Part Two Meal

I love Part Two meals. The rest of last night's roasted zucchini, orange pepper, onion, and sweet potato made a very nice salad for tonight. With the addition of a cucumber from my husband's garden and some tomatoes. Inspired by my friend Jessica, who has a way with roasted vegetables.
